Black Pearl's Cherry Dusted Pork Tenderloin with Bacon Wrapped Asparagus

Ingredients

  • 2 1/2 - 3 pounds Pork Tenderloin

  • A medium size bundle of Asparagus, washed and stems cut

  • Sliced bacon (medium thickness)

  • Wooden skewers that have been soaked in water for 30 minutes. (bacon wrapped asparagus bundles will be held together with wooden skewers).

Directions

  1. Rub about 1 tablespoons cherry seasoning on pork tenderloin and wrap for at least 2 hours.

  2. Place tenderloin on the grill and cook to desired doneness.

  3. Baste tenderloin with cherry BBQ sauce (see sauce recipe below) for the last 10-15 minutes of grilling. At which time you will place the asparagus bacon wrapped bundles on the grill that have been dusted with the cherry rub. You will place wooden skewers through bacon and asparagus to hold bundles together.

Note: Tenderloin can either be basted with Cherry BBQ sauce or sauce can be served on the side. You can also use our glaze.

Cherry Sauce Recipe

Use 1 pint of your favorite original BBQ sauce, (we use Sweet Baby Ray's Original). Warm in the microwave for 30 seconds until heated through. Add 2 tablespoons of the dry cherry seasoning and mix well until dissolved. Store in the refrigerator.

Cherry Glaze Recipe

Use 1 pint jar of apple jelly instead of BBQ sauce and follow directions above for Cherry sauce.
